Christmas Cupcakes: Easy & Simple!
Hey girlz! Today I made... cupcakes! Half the time they don't usually even work -- this time I'm guessing I put a little too much self-raising flour in the mixture, so they kind of raised a bit high. But hey, that's me. Masterchef Emii. ;)
Ingredients:
1/2 cup custard powder
1 & a 1/2 cups of self-raising flour (Remember, don't be like me and think, 'Oh yeah, why don't we just put a bit more in -- doesn't really matter.')
3/4 cup of caster sugar
125g butter, melted
3 eggs
1/2 a cup of milk
1 teaspoon vanilla essence
What to do:
Line patty pans in the muffin/cupcake thing
Sift dry ingredients
Combine all ingredients with an electric mixer until changed colour (and all combined! Don't be like me and start putting it into the patty pan things without it actually being properly mixed. Oh yeah, I'm totally pro. You SO have to see my attempts at cookies...)
...oh yeah, preheat the oven to 180 degrees celcius... yeah, another thing I usually forget but actually remembered this time! (Well, mum did, anyway. Thanks, mum!)
